Diabetes and Virgin Coconut Oil "coconut oil puts less of a demand on the enzyme production of the pancreas. This lessens the stress on the pancreas during mealtime when insulin is produced most heavily, thus allowing the organ to function more efficiently. Coconut Oil also helps supply energy to cells because it is easily absorbed without the need of enzymes or insulin. It has been shown to improve insulin secretion and utilisation of blood glucose.15,16 Coconut oil in the diet enhances insulin action and improves binding affinity compared to other oils... Coconut oil raises metabolic rate causing the body to burn up more calories and thus promote weight loss" (Adapted from Bruce Fife's book The Healing Miracles of Coconut Oil)

Coconut Research Center "you have short-chain fatty acids (SCFA), medium-chain fatty acids (MCFA), and long-chain fatty acids (LCFA). Coconut oil is composed predominately of medium-chain fatty acids (MCFA), also known as medium-chain triglycerides (MCT)...The vast majority of fats and oils in our diets, whether they are saturated or unsaturated or come from animals or plants, are composed of long-chain fatty acids (LCFA). Some 98 to 100% of all the fatty acids you consume are LCFA... The size of the fatty acid is extremely important. Why? Because our bodies respond to and metabolize each fatty acid differently depending on its size. So the physiological effects of MCFA in coconut oil are distinctly different from those of LCFA more commonly found in our foods. The saturated fatty acids in coconut oil are predominately medium-chain fatty acids. Both the saturated and unsaturated fat found in meat, milk, eggs, and plants (including most all vegetable oils) are composed of LCFA... MCFA are very different from LCFA. They do not have a negative effect on cholesterol and help to protect against heart disease. MCFA help to lower the risk of both atherosclerosis and heart disease. It is primarily due to the MCFA in coconut oil that makes it so special and so beneficial."
Coconut Oil article by Laura Wheeler... "both cold-pressed, and fresh pressed. This category of coconut oil is classed as “extra virgin”. It is reputedly the healthiest. The Nutiva brand also happened to be one of the most economical, so I bought two jars... When it arrived, I began mixing it into my morning hot chocolate (sugarfree, of course). I started with a tablespoon, because I was warned that it could be very laxative. It was not for me, so I increased it to 2 tablespoons within a few days... The first thing I noticed is that about 20 minutes after using it the first time I felt a flush of heat. It lasted about 10 minutes and then went away. The next day it was less. The third day it was not there at all. Cayenne, which also reportedly speeds up metabolism, will do the same thing... Two days later, I noticed that my blood sugar levels were lowering. From 190 (2 hours post prandial after 15 gms of carbohydrate), down to under 140 on 30 gms of carbohydrate. Within a week my blood sugar levels had normalized"
Three Oils That Make you Skinny How to use coconut oil: "Spread coconut oil on toast instead of butter, melt it on veggies or use it for sautéing. But don't deep-fry with it; coconut oil breaks down at high temperatures. Look for virgin oil (nonvirgin is processed and tastes nasty) at health-food stores. Beware: Coconut oil is saturated and can raise cholesterol and triglycerides, so alternate it with other oils"
FAQs If you refrigerate or freeze it the taste changes completely, and some describe it like a "candy" or "white chocolate." ..use it as a spread, many people use it with fruit smoothies, and a lot of people put it into their coffee or tea"
